Yummy Recipes

 
 
I found this recipe on Pinterest.  I had some chicken that I wanted to use and was craving pasta.  I seached on Pinterest and found a really easy/fast recipe for Chicken Parm.  Here it is:
 
You'll need:
Boneless, skinless chicken
Spaghetti or marinara sauce
Shredded Mozzarella cheese
1/3 c. Breadcrumbs
1/3 c. Parmesan cheese
1 egg
1/2 tsp. dried oregano
1/4 tsp. garlic salt
1 Tbsp. Olive oil
pasta of your choice
 
The recipe I got this from called for 4 chicken breasts, but I had 2- one big and one small, that I made into 3. 
 
*Before I started cooking the chicken, I started the water for the pasta because the chicken doesn't take long to cook.  :-)
 
1. Mix the breadcrumbs (I used Italian Style), Parmesan cheese, oregano, and garlic salt together in a shallow bowl. 
2. In another shallow bowl beat the egg with a fork until bubbly. 
3.  It said to wrap the chicken in plastic wrap and gently pound it with a mallet to flatten it. 
(I already had my chicken in a ziplock bag so I let he air out so it wouldn't pop when I hit it and left it in there to flatten.)  They said about a half inch would be best.  Mine ended up being a little thicker than that.   
4.  Dip each piece of chicken into the egg, being careful to coat it, and then into the breadcrumb mixture.
5. Place all pieces of chicken into the skillet with the olive oil it in, on medium heat.
6.  Cook for about 5 minutes on each side so that they are cooked through. 
 
 
7.  Turn heat to low and spoon sauce on top of each piece of chicken.  Then sprinkle mozzarella cheese on top. 
8.  Cover and cook for another 3 or so minutes until the cheese is melted.  
 
Serve over pasta. 
I used fettuccine and I also made Pepperidge Farm mozzarella garlic bread to go with it. 
It was really fast, easy, and tasty! 

Garlic Grilled Zucchini

This is an oldie but goodie!  :-)  I have been making this for a few summers now.  It's a very simple, summery side dish.  I usually make it with steak or burgers and hot dogs.  First you slice the zucchini into slices about a quarter of an inch thick.  Then you brush them with olive oil.  Sprinkle them with garlic salt, flip and repeat.  Then grill, flipping halfway through.  Simple, right?  They are sooooo good too!

Cheesy Bacon Potato Rounds!

I made something tonight that was super yummy!!  I stole the idea from Pinterest and tweaked it a little bit.  First I preheated the oven to 400 degrees.  Then I scrubbed 3 potatoes and sliced them using my OXO slicer on number 3.  They were about a 1/4 of an inch thick.  Then I put the slices in a pot with cold water.  I placed that on a burner and turned it to high.  Once they started boiling, they boiled for 5 minutes.  Then I carefully drained them in a colander and spooned them out on a paper towel.  Pat them dry.  Place them on a pan with either non-stick cooking spray or non-stick foil in a single layer, overlapping them.  
Lightly spray the top of them with cooking spray.  Add salt and pepper.  Cover with shredded cheese (I used white cheddar from a block and shredded it).  Then add bacon bits (I used Oscar Myer Real Bacon Bits).  Bake in the oven for 10-12 minutes or when the cheese starts to brown.  They were SOOOO good!  We gobbled them up!!  Enjoy!

Breakfast Casserole

I found a recipe on Pinterest and tweaked it to fit what we like.  After I made it the first time, I no longer went by a recipe.  It is really delicious!  
 Preheat the oven to 450 degrees.  I also line the glass pan I use with nonstick foil (if you don't, make sure you spray the glass pan).  First, you whisk eggs together in a bowl.  For a small 8x8 pan use 6-8 eggs depending on how moist you would like it.  I used 6 for this time and it was a little dry.  I then added a little bit of milk and whisk that in.  I added 4 cups of frozen shredded hash browns.  I added about a 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded mozzarella cheese.  I then mixed in half a bag of Oscar Myer real bacon bits.  I poured the mixture into the pan.  On top, sprinkle the rest of the bag of bacon bits, another 1/4 cup of each shredded cheddar and mozzarella.  I also cover the pan with foil and bake for about 35 minutes.  Be sure to check to see if it is cooked through before serving.  

I forgot to take a picture of it before we dug in!  I also made a big pan of this when Will's family came.  That time I used an 11x13, 18 eggs and about 10 cups of frozen shredded hash browns.  It did take longer to cook.  They loved it.  Enjoy!

Homemade Sweet Tea

Today it was almost 90, which is pretty warm for Maine.  So while we were working on the house, I decided I would try out a new idea I saw in the local newspaper.  
I placed four regular tea bags in the coffee maker with the tags dangling out.  I then measured 4 cups of water with the coffee pot and poured it in the top, just like making coffee.  I turned it on and waited for it to brew.  While I was waiting, I got out my Pampered Chef pitcher.  It has lines on it for every quart, which came in helpful for this.  I put a cup of sugar in the bottom of the pitcher.  As soon as the tea was done brewing, I poured it in the pitcher and mixed it so the sugar dissolved.  It was now up to the 1 quart line, due to it being 4 cups of tea.  Then I added 2 quarts of cold water.  This brought it to the 3 quart line.  I found it to be a little on the sweet side, which I really like, but if you prefer it a little less sweet, you could add ice or more water.  It was GREAT!  
I went to my friend Emily's house today to drop some things off to her and told her about it.  She wanted to make some too.  She only has a K-cup coffee maker so we used her tea kettle on the stove.  Also she only had a smaller pitcher that wouldn't fit the recipe I made, so we cut everything in half.  :-)

Baked Cheesy Zucchini



This was a recipe I found on Pinterest and tweaked it a little bit to work for me.  
You will need:
2 zucchinis
Olive Oil
Garlic Powder
Salt
Pepper
Shredded Mozzarella Cheese
Parchment Paper
I first cut two zucchinis into fairly thick slices.  I put them in a bowl and poured some olive oil over it.  I picked them out of the bowl and placed them on a cookie sheet covered in parchment paper.  I sprinkled them with salt and pepper.  I then placed the pan in the 375 degree preheated oven.  I let them cook for 10-12 minutes.  I took them out and turned the oven to broil.  I added garlic powder and shredded mozzarella cheese to the top of each piece.  I placed the pan back in the oven, now on broil, until the cheese started to brown.  Be sure to wait a few minutes before eating.  They will be super hot!  Enjoy!

Foil Pack Chicken


This is what I made tonight for dinner.  I got the idea for Foil Pack Chicken from Pinterest.  It is very simple.  

You will need:

Chicken

A box of Stovetop Chicken Stuffing

Broccoli

Bacon pieces or bits

Shredded cheddar cheese

Ranch dressing

Foil (the non-stick kind or use non-stick cooking spray)




The recipe I saw was for four pieces of chicken, but I modified it to be two.  First, you need to lay out fairly large pieces of foil.  (I used non-stick, but if you don't, be sure to spray your foil with non-stick cooking spray.)  Next, you will need a box of Stovetop Chicken Stuffing.  Mix it in a bowl with a cup of water.  Place a layer of stuffing in the middle of each piece of foil (If you are cooking for two, depending on how much you use, you probably will have some left over).  Next, place a boneless chicken breast on top of the stuffing.  I have made this recipe with full sized pieces and I have also cut them diagonally.  It makes for a smaller serving size and less cooking time if you decide to cut them.  Next you put a layer of broccoli.  (I use the $0.89 box of frozen Hannaford store brand broccoli.  I just rinse it enough so that I can cut it into pieces.)  Next, sprinkle some shredded cheddar cheese.  Then, sprinkle some bacon pieces on top.  (I use the bags of Oscar Mayer Real Bacon Bits.)  Then, finally, drizzle ranch dressing on top.  Fold up the sides of the foil to be airtight and also so there is room around the chicken so that air can circulate.  Place on a cookie sheet and place in a preheated 375 degree oven.  If you cut your chicken breasts, or they are smaller, it should take around 35-40 minutes.  If you are using whole chicken breasts, it will take about an hour.  Be careful opening the foil, the steam comes out quickly!  Enjoy!
